Ingredients
- 2 oz BNAAA Mezcal
- 1 oz fresh lemon juice
- 3/4 oz simple syrup
- 1 egg white (or 3/4 oz aquafaba)
- 3 dashes Angostura bitters
Made with BNAAA Mezcal, the mezcal in every recipe here.
Method
- Dry shake the mezcal, lemon, syrup and egg white without ice for 10 seconds.
- Add ice and shake again for 12 seconds.
- Strain into the glass.
- Dot the bitters on the foam and drag a toothpick through them.
Tip. Rich simple syrup (2 parts sugar to 1 part water) at 1/2 oz gives the same sweetness with less dilution.
